Filipino sauces and dips

Most Filipino sauces feature ingredients like soy sauce, fish sauce, fish paste, citrus juice and vinegar. However, there are many other different types of sauce from this area of the world, some that are made specifically for certain dishes and others that go with a variety of foods. Here are some of the most common Filipino dips and sauces that are eaten both in the country and across the rest of the world.

Patis, or fish sauce, has a very strong taste and pungent smell. Its salty quality goes well with meat dishes that include a broth, as well as many different types of fish. This sauce can be poured over a snack for a tasty accompaniment to a relaxing evening or a game of cheeky bingo and it goes with many different flavours. For noodle dishes, combine the fish sauce with lemon juice and pour it over the food. The citrus will compliment the flavours well and will add an interesting element to the overall flavour of the dish.

Soy sauce also goes well with lemon juice and this combination is often poured over Chinese noodles and dim sum. Add chili to this mixture and you will have another great accompaniment for fish, beef, chicken or pork. It also goes well with vegetables, complimenting the flavours and adding its own unique taste into the mix.

Sauces that are native to the Philippines tend to often be a lot more flavourful than many others throughout the world. This is not necessarily because the food here is bland, but more simply because the local residents have found flavours that go very well with certain dishes and have learnt to appreciate them. So when you eat food from the Philippines, make sure that you experience it with the right sauces and your taste-buds will be let into a world of flavour.

ADOBO CONNECTION opens in WCC Shaw Blvd

smoking at the Worldwide Corporate Center in Shaw Boulevard is the newly-opened Adobo Connection. a wide array of the nationwide-known local dish, adobo, finally reaches the mid-EDSA tummies who craves for it. really, the adobo connects the islands and diverse culture of the Philippines with its distinct style and taste.
the place can accommodate around 30 people at the first floor while you can occupy the second floor where you can also lounge out with your friends. the owner of the branch, Ms. Cris Canlas, opened this opportunity for visitors to also try the neighboring bistro which caters to the dynamic customers who work at WCC.
the opening of the WCC branch was attended by Jerome Uy and Meredith Ngo (Managing Directors) who brainchild the concept of Adobo Connection. Kellda Centeno - Managing Director; Cris Canlas - Owner of WCC Branch and Johanna Manimbo, Assistant Marketing Manager.
guests had the chance to enjoy the Adobo Connection Best-Sellers: Kuya's Fried Mix Adobo, Modern Nutty Adobo, Adobo Flakes, Adobo sa Gata, Beef Kare-kare, Gising-gising and Poqui-poqui. the humble adobo dish tweaked into very sumptuous and like Filipinos, rich in diversity.

you'll be curious who carries the name "Kuya" beyond this dish. but as the tender pork and chicken meat touches your palate, you cannot stop devouring the whole thing. it is cooked until dry just like how it's home-made.

Modern Nutty Adobo

this is best served with beer and good for sharing. pork adobo shreddings, fried to its crispiness and dipped over vinegar made me speechless with that tingling sensation in my mouth.

Adobo sa Gata
Bicol Region represented in this dish. this will not make you tired of the usual adobo taste with the sweetness and creaminess of coconut milk refreshes your stomach and the heat of chili bits that releases your stress inside the body.
